Lima-born Los Angeles chef and restaurateur Ricardo Zarate has been called “the godfather of Peruvian cuisine”. Perfectly capturing the spirit of modern Peruvian cooking, reflecting indigenous South American foods as well as Japanese, Chinese, and European influences with an American sensibility, Zarate is also the author of The Fire of Peru.
Wilo Benet has redefined Puerto Rican cuisine. After graduating from Culinary Institute of America, Wilo worked at The Maurice Restaurant, The Water Club and Le Bernardin in New York, returning to Puerto Rico in 1988 as Chef De Cuisine at the Governor’s Mansion. This paved the way to the opening of his acclaimed restaurant Pikayo in 1990, which lives within the Condado Plaza Hilton in San Juan.
A self-confessed cork dork, freelance journalist and sommelier Sorrel Moseley-Williams traverses South America’s southern cone in the quest for food, wine and travel experiences. Last weekend took her to a sea salt party in Argentine Patagonia; a few months ago she unearthed the story about Bolivia’s freshwater clams; next month she’ll be road-tripping to Uco Valley in Mendoza with some somm mates. Living in Argentina’s northeast in 1998 for a year then making a permanent move in 2006 to Buenos Aires, she has contributed to CNN Travel, Condé Nast Traveler and Traveller, The Guardian, Saveur, The Independent and Departures. She writes weekly in the Buenos Aires Herald and is wine editor of Time Out Buenos Aires. Guide book collaborations include Wallpaper*, Fodor’s and Rough Guide among others; she has also written for Cuisine & Vins, La Nación, U-Like It and Forbes Argentina in Spanish.
