Joseph Archbold is the chef of the restaurants Receta Michila and Octo in Bocas del Toro, Panama. After working at top restaurants in France, he returned to the place he grew up, taking over the kitchen and hotel his mother once cooked at, Hotel Dona Mara, and recreating it with his own vision. He has been working hard to strengthen the island’s foodways and resurrect forgotten recipes.
