Following the success of inaugural The Grand Gelinaz! Shuffle in 2015, this November will see the return of the international restaurant swapping chef event, naturally called The Grand Gelinaz! Shuffle Two(2). With a goal of pushing culinary boundaries and furthering a global discussion between chefs, 40 of the world’s best, whose innovative cooking transcends continents and oceans, will cook simultaneous dinners for public consumption in kitchens unfamiliar on Thursday, November 10. Tickets go on sale on next Wednesday, September 21st.
For the uninitiated, Gelinaz! is a collective of and for chefs that has staged outrageous and provocative one-off food events around the world in collaboration with artists, musicians, scientists, thinkers and producers. Like 2015’s Shuffle, which saw 37 chefs from around the world swap restaurants, homes and personal lives for four days, The Grand Gelinaz! Shuffle Two (2) is the brainchild of Andrea Petrini and Alexandra Swenden. This year, a total of 40 chefs from 17 countries and five continents will vacate their native kitchens for a foreign restaurant and kitchen of a fellow Gelinaz! Shuffle chef, picked at random by ballot.
On arrival at their assigned destination, three days prior to the event, visiting chefs will create unique eight-course menus playing off their host restaurant’s rhythm and culinary style. They will not be able to utilize ingredients from their own restaurant or country; instead the chefs must collaborate with their adopted kitchen teams to showcase an original menu inspired by the culture and bounty of their temporary cities. The public can buy tickets for any participating restaurant in the Shuffle, but will be unaware of who the guest chef will be. Once seated for dinner on November 10th, all guest chefs will be revealed and dinner will commence.
“The Shuffle is getting bigger as we incorporate more of the world’s most extraordinary culinary talent into the Gelinaz! collective,” explains Andrea Petrini. “Every project we do is more innovative and diverse than the last. The element of surprise and endless outcomes of where each chef ends up is truly exhilarating.”
“In last year’s swap we saw René Redzepi take residence at Nahm in Bangkok, Mauro Colagreco make a trip to Hisa Franko in Slovenia and Claude Bosi cross the pond for a stint at San Francisco’s Atelier Crenn. We can’t wait to find out what Shuffle Two (2) will bring out,” Swenden continues.

As if that’s not enough, this year, another project will launch on November 10th and run simultaneous to the Shuffle: The Gelinaz! Brussels HQ. Featuring 20 more of the world’s best chefs, HQ is to be staged in Brussels, Belgium (the birthplace of Gelinaz!), at Christophe Hardiquest’s two Michelin-starred restaurant Bon Bon. The event will feature recipes from the 40 swapping chefs in the Shuffle Two(2). Confused? We understand.
Here’s how it will work: Once informed of their Shuffle location, each Shuffle chef will create a dish based on the imagination and expectations of the restaurant they’re set to visit. At HQ, the collected recipes will be reinterpreted during four 3 hour-long dinner seatings; with each of the 20 chefs working in pairs to produce these. Still confused? Us too. Kinda.
Here’s more: HQ will begin at Noon on November 10th — the same time the first Shuffle restaurant opens it doors for dinner in Adelaide, Australia. There will be four seatings throughout the day, during which 10 dishes will be served, that will continue until 3 AM on November 11th, when the very last Shuffle pop-up in San Francisco will end at the same time.
